Blueberry Waffles


It wasn't until I was in my late 20's, after I met my husband (some 20 years ago...), that I discovered I have a love of blueberries.  Growing up, I don't remember eating a blueberry other than in a sweet, cupcake-like muffin, and I certainly don't recall ever eating a fresh blueberry right out of the basket.   Fruit salads also remained blueberry-less.

My husband, however, lists blueberries as his favorite fruit and has indeed passed the blue gene down to Liv.  As a baby she she would gobble exorbitant amounts of the little blue orbs costing me a small fortune in out of season organic berries.  Today she still loves blue berries and will snack on a handful them right from the freezer as she whips them into some sort of smoothie.

Also loving all things breakfast, the Blueberry Waffle is a frequent Liv request, especially on leisurely weekends.  While she prefers to place her berries by hand into pancakes, creating an individual smilie face on each one, I prefer to dump a handful or two into my waffle batter for more of an I-don't-have-time-for-that scattered look.

With our new Cuisinart Waffle Maker, waffles have been making more of a frequent appearance on our breakfast table.  This particular version is filled with plump fresh berries in addition to protein-rich eggs and whole grains for a healthier start to her day.  Topped with additional fresh berries as well as Pure Maple Syrup, we have a keeper.



Blueberry Waffles
Light and crispy, these waffles will be the hit of your weekend!  Substitute diced banana, strawberries or whole raspberries for the blueberries for a change of pace. 

1 1/4 cup all-purpose flour
1/2 cup spelt flour
3 Tbs ground flax meal
1 Tbs baking powder
1/8 tsp salt
1 2/3 cup skim milk (we use rice milk)
2 Tbs sugar, brown sugar or honey
3 Tbs vegetable oil
2 extra large eggs
1 cup frozen or fresh blueberries
Additional blueberries in addition to maple syrup for topping

In a large bowl add the flours (may use all all-purpose if desired), flax meal, baking powder and salt.  Whisk to combine.

In a medium bowl measure the milk, sugar (or honey), and oil.  Lightly beat the eggs in a small bowl and then add to the milk mixture.  Whisk to combine.

Pour the wet ingredients into the dry ingredients and stir until mostly incorporated.  Add the blueberries and stir gently until batter and blueberries are combined - being careful not to over mix.

Follow the directions of your waffle maker to proceed.

Serve and top with additional fresh berries (any type of berries make a wonderful topping) and pure maple syrup.

Liv Life Note:  We make the waffles often, but occasionally we need to add a bit more flour or a touch more water to achieve proper batter consistency, adjust as necessary.

  1. I didn't grow up eating blueberries either but now they are one of my favorite fruits. Funny how that happens. They're so easy to eat right out of the basket so I can relate to Liv. :)

    You've just served up one of my favorite ways to have them for breakfast. Whenever my husband craves something other than oatmeal and apples, I always make blueberry waffles. Looks great! :)

  2. I've been waiting for the good blueberries to hit the market. The ones out now aren't good enough for popping straight into the mouth, but I wouldn't mind then on a waffle like this. My daughter used to eats fruit like candy too. Liv's lucky you spoil her with breakfast like this. Hope your week is going great.

    Blueberries are my husband's favorite fruit, too. He used to pick them in Wisconsin as a child. Now we have them in pancakes, waffles, and oatmeal, when we can get them for the Midwest.

  5. Wow I used to go berry picking with my family all the time at a U-pick farm. I think I ate more than we paid for! But I definitely love them in waffles too.

  7. I used to be like you -- I never really had blueberries growing up unless they were in something store bought/made at a restaurant. My husband has completely converted me, and now I'm the one that keeps them around to munch on like candy. These waffles look absolutely divine and perfect for a Saturday breakfast!

  8. Gorgeous waffles... Sadly, I have only ever tasted dried or frozen blueberries... we don't grow them here, and I wish I could taste the fresh ones! My daughter is the same way about strawberries. She can eat her way through boxes and boxes of strawberries. Keeps my wallet lighter for me :) Amazing looking waffles, Kim! Thanks for sharing :)

  9. This is the perfect recipe for us right now, we just picked up a brand new waffle maker at a garage sale last weekend! I didn't like blueberries as a kid, but thank goodness that ran it's course and I love all (mostly) fresh fruits and berries now!

  12. I've always had a thing for blueberries and yes, have passed that along to Dudette, though for her I think the appeal is not being able to feel the seeds more than anything else.

    We're a waffle family but I also have never even though of putting blueberries anywhere near them. Now I need to.

  16. I adore blueberries. Especially the fresh-picked wild ones. They grow by the side of the road up in Maine near my sister in law and we go out with bowls and pick them!

  22. I've always like blueberries. As a kid I used to eat bolws of them with milk and sugar sort of like cereal minus the grains. They really are great on waffles. I need to get myseld a waffle maker too!
